Zero Calorie Fat Substitute Z Trim
Scientist at the U.S. Department of Agriculture developed this corn-based fat substitute in 1995. Z Trim can be used replace up to half the fat in a food, and apparently without altering its taste or texture.
Z Trim is a gel formed from 96 percent water and 4 percent fiber derived from corn hulls and contains no oil or fat. Used in items like cookies and fudge brownies the gel allows for the items to remain moist and tasty and according to those who tasted it Z Trim does not leave any weird aftertaste.
It can be used as a fat replacer in a variety of foods from salad dressings to cakes. Although heat-stable, Z Trim can’t be used for frying.
