Turkey Hash

You do don’t have to give up this breakfast favorite on South Beach; slightly modified with sweet turnips and turkey breast, our modern interpretation is delicious. Try it topped with a poached egg.

PREP TIME: 10 minutes

COOK TIME: 20 minutes

2 teaspoons extra-virgin olive oil 1 small onion, chopped
1 small red bell pepper, diced
2 medium turnips, peeled and cut into 1/2-inch dice
1/2 teaspoon dried thyme
1 pound cooked skinless roasHurkey breast, cut into 1/2-inch cubes
1/4 cup fat-free half-and-half
Salt and freshly ground black pepper

Heat oil in a large nonstick skillet over medium heat. Add onion and bell pepper and cook until softened, about 3 minutes. Add turnips and thyme; stir and cook until tender, about 10 minutes. Stir in turkey and half-and-half; simmer until liquid has thickened slightly, about 3 minutes. Season with salt and pepper to taste.

Makes 8 (’12-cup) servings

Per serving: 110 calories, 2 g fat, 0 g saturated fat 18 g protein, 4 g carbohydrate 1 g dietary fiber, 100 mg sodium
