How To Tame The Killer French Fries
Feeling the urge for a few french fries? You know that fast food is fried in hydrogenated fat, and that trans fats are bad for your health. What are you to do… especially when you’re in a rushed?
Susan’s Baked “Fries” Recipe
2 lbs. (2 large) baking potatoes. Can be white (best are russet) or sweet potatoes
2 Tbsp. olive or canola oil
Salt to taste
Cayenne pepper (optional)
Preheat oven to 475 degree F. Line two large baking sheets with parchment paper, or spray with cooking spray. Scrub potatoes… peeling is optional. Slice potatoes into 1/2 inch slices, lengthwise, then stack three slices at a time and cut into sticks, about 1/4 - 1/2 inch wide. Place in bowl, sprinkle on oil and seasonings and toss until evenly coated. Spread out on the pan in one layer and bake for about 35-40 minutes until brown, stopping halfway through to toss and turn so that both sides get brown and crispy. Season with salt and serve.
