Celery with Herbed Cream Cheese and Walnuts

This tasty grown-up version of an old-time favorite is great for a party or a take-along snack. You can try the cream cheese mixture as a spread on wholegrain crackers or use it for tea sandwiches on whole-grain bread.

PREP TIME: 5 minutes

COOK TIME: 15 minutes

1/3 cup walnuts
1 (8-ounce) package reduced-fat cream cheese, at room temperature
1 tablespoon chopped fresh chives
16 large celery stalks, trimmed
Salt and freshly ground black pepper

Heat oven or toaster oven to 275°F. Spread walnuts on a baking tray and bake until fragrant and toasted, about 10 minutes. Roughly chop.

Combine walnuts, cream cheese, and chives in a mixing bowl. Mix
well. Add salt and pepper to taste.

Using a rubber spatula, fill each celery stalk with 1 tablespoon cream
cheese mixture and serve.

Makes 8 servings

Per serving: 90 calories, 6 g fat, 2 g saturated fat, 5 g protein, 6 g carbohydrate, 2 g dietary fiber, 240 mg sodium
